Healthy Cozy Autumn Sausage Soup Recipe
Guys, the temperatures are dropping, the days are getting shorter, and my heart couldn’t be happier. There have been rainy cool days full of baking, coffee, movies, and good books the past week, and I am HERE for it. Of course, one of the best things about the change in the season is the change in the weekly meal rotation. In the fall and wintertime, we really like to indulge in some heartier meals. Soups, Stews, Casseroles and crusty loaves of Sourdough are all about to come into the scene and I’m thrilled to be kicking it off with this healthy take on a Sausage Soup.
I love this recipe. It’s got the comfort food factor without being overly heavy, overly fatty, or overly difficult. You can make it from start to finish in one pot and the reheated leftovers the next day are AMAZING! You could also brown your kielbasa before hand and do this in a crockpot on low all day. We’ve made so many variations of this with pasta, different meats (ham was delicious!), different beans… you really can’t go wrong.

Turkey Sausage Kielbasa
2 Cans White Beans (we like Great Northern)
Package of Spinach
36 ounces Chicken Broth
1/2 Onion
Garlic
Olive Oil
Directions
- Cover the bottom of a stock pot with Olive Oil to Saute Onions and brown your Garlic.
- Slice Kielbasa and add to your browned onion and garlic. Cook over medium heat until the edges of the sausage are browned.
- Add Chicken Stock, Spinach and Drained Beans.
- Cook over low heat for at least 30 minutes. I like to let mine sit on low heat for a few hours.
- Serve with warm, buttered, crusty bread
