Healthy and Delicious Cheese Cracker Recipe

We tear through homemade sourdough crackers at an alarming rate in our home. Since cutting back on added sugars, though, I’ve noticed a whale sized hole in my heart… a cheese flavored one, to be specific. The kiddo and I are both huge fans of any sort of cheese or cheese flavored snack (honestly, his third word was “Cheese!” and it wasn’t for the camera) so finding a replacement cheese cracker was a necessity.

A couple of search terms on Pinterest, and I was on the Brown Eyed Baker website staring down the page at what might be the simplest cracker recipe I’ve ever read.

A few takeaways from my first go at this recipe. 
  • I didn’t spray my sheets and we’ve all eaten our fair share of wax paper. Totally worth it, but in the future, I’ll be sure to spray to ensure a clean removal. If you have baking sheets, that would probably eliminate the sticking/eating wax paper problem. 
  • Bake the crackers till they’re a little brown-ish but not quite burnt. My crackers came out in various tones of oranges and browns due to a poor “Rolling” job, but, the slightly brownish ones were a fan fave in our house. 
  • Just go ahead and start making a second batch as soon as these come out of the oven. You’re going to need them. The first batch will be devoured before they’ve finished cooling.
These went with my husband to work, where it was decided they would be amazing in Tomato Soup or as a crouton, and I 101% agree. They were devoured in record time, and I never once felt guilty about the kiddo eating all sorts of preservative laden chemically psuedo orange fish or penguins. 
 
I want to try a batch with whole wheat and my husband thinks it would be fun to experiment with different types of cheeses. I’ll keep you updated on any experiments as they happen. In the meantime, search your fridge for sharp cheddar immediately and get to making these!! You won’t be sorry.

Ingredients

  • 8 ounces extra sharp shredded cheddar cheese

  • 1/4 cup room temperature unsalted butter

  • 1 tsp salt

  • 1 cup all purpose flour

  • 2-3 TBS ice water

Directions

  • In a stand mixer, use your paddle attachment to mix cheese, butter and salt until blended well
  • Slowly add in cup of Flour until mixed well. It will become “Pebbly” in the bowl
  • Add ice water 1 tablespoon at a time until a dough forms.  Cheese Crackers
  • Flatten dough and wrap in plastic wrap. Chill for at least one hour.
  • Preheat oven to 375°
  • Spray 2 sheets of wax or parchment paper with cooking spray and roll out your dough to 1/16″
  • Using a pizza cutter, cut into 1″ squares  Cheese Crackers
  • Move paper to cookie sheet and bake for 14-17 minutes
  • Devour all the crackers
