Grilled Sweet Potato “Steaks” Recipe
Happy Meatless Monday! I don’t know about you, but, 99% of the cooking in this household has gone from the kitchen to the backyard. We’re finding ways to grill out just about every night of the week. However, a family can only eat so many variations of Burgers and Hotdogs before you need to switch it up. This recipe was a bit of a Hail Mary one night when “Nothing” sounded good and we hadn’t been to the store for fresh meats in a few days.
Sweet Potatoes are so great for keeping stashed away in the pantry. They’re packed with delicious nutrients, and toddler approved. I love to add them to sheet pan meals, but, wanted to take these versatile roots to the grill and put a new spin on them.
First, I sliced the potatoes length wise to create “Sweet Potato Patties” that would work well on the grates of the grill.
Then, I tossed them in a bowl with Olive Oil, Garlic Salt, Basil and a little bit of Pepper. I wanted to keep the extra flavoring a little light so the natural flavor of the veggie could shine.
Lastly, I tossed them on the grill for about 5 minutes on each side. Once I saw the nice grill lines, I pulled them off.
To serve this batch of “meatless steaks,” I plated them with a Couscous Medley I had stashed in my freezer. You could easily serve these up with pasta or rice and let them shine as the main course, or as a side dish to an actual steak. Griller’s Choice.
