Dark Chocolate Peanut Butter Oatmeal Cookies

Making “healthy-ish” cookies has become a weekly ritual here at the homestead… especially since we’re stuck at home all day every day. We need cookies on standby 24/7. I’ve been messing around with a few recipes and it seems that any time I make THIS one, the cookie stash dwindles much more quickly. My husband has decided they’re his favorite, and it’s easy to understand why.

Any time you combine Peanut Butter, Dark Chocolate and Sea Salt, you’re bound to be in tastebud heaven.. am I right?! And since these cookies are made with Oats instead of Flour, they’re thick and hearty – a PERFECT snack! This is one of those recipes that’s so simple, you’ll have it memorized after your first few batches. The cookies can be stored in an airtight container for 3-5 days, but if they make it that long, I’d be surprised.

Dark Chocolate Peanut Butter Oatmeal Cookies

1 tsp Baking Soda
1/2 tsp Salt
1 Cup Old Fashioned Oats
2 Eggs
1/2 c Brown Sugar
1 c Peanut Butter
Dark Chocolate Chips (measure with your heart)
Sea Salt to Top Cookies
Directions
- Pre Heat Oven to 350℉
- Mix your Dry Ingredients in a Bowl; Baking Soda, Salt and Oats
- Beat your Eggs and Brown Sugar together
- Add Peanut Butter to Wet Ingredients
- Slowly Add in Dry Ingredients
- Add as many Dark Chocolate Chips as your Heart Deems Necessary
- Spoon 16-18 Tablespoon Sized Balls of Dough onto Lined Baking Sheets
- Smash Dough Balls down about halfway with a fork
- Sprinkle with Sea Salt
- Bake 9-12 Minutes until tops begin to look done
- Cool on Rack
